Stir-Fry Vegetables in a Pita Pocket

I was looking for a vegetarian main dish with lots of vegetables and no tofu, and somehow lucked out in creating this the first try. It's a little weird, but a couple of other people have tried it and like it, so I think it's not just me.

I don't make this very often any more. I'm more likely now to prepare Vegetarian Fajitas.

Chop, slice, shred, etc.

Carrot
Cabbage
Mushrooms
Celery
Onion
Leek
Etc.

Stir fry enough of the above in a small frying pan with:

Garlic
Ginger
Soy Sauce
White Wine or Sake

Spice to taste with:

Black Pepper
Thyme
Sage

Slice open one end of a whole wheat pita. Spread (or dollop) inside the pocket:

Almond Butter
Jack Daniel's Honey Dijon Mustard

Scoop the cooked veggies (still a little crispy) into the pocket.
