Turkey Loaf

2 Eggs
2-3 lb ground meat (turkey, lamb, beef, pork, etc.)
chop fine or food process celery, mushrooms, bell pepper, carrot (or grate), onion, garlic, broccoli florets and inner stalk, etc.
1 C oats
salt, pepper, hot sauce, worcestershire sauce, etc.
sage, thyme, basil, etc. (ginger if you use pork)

Cook the vegetable ingredients. Currently, I'm doing it on the stove with a little olive oil in a lidded, straight sided pan. You could also nuke it, or bake them by themselves for a while. Leave the lid partly off after a while to let it dry out. Try not to let it stick.

Combine all ingredients in a deep bowl. Pack it into a large loaf pan. Optionally top loaf with strips of bacon or ketchup. Cook at 350 F. until done. Expect it to take about an hour. Because all the vegetables keep it very moist, it will not dry out.
