Broiled Tomatoes

Much like the Bell Pepper and Celery Salad, this recipe is a little simple for me to ordinarily bother writing down. But. There is this great fake parmesan cheese from Galaxy Foods that is vegan and tastes remarkably like the Kraft stuff in the green container so many of us remember from childhood. This isn't good parmesan. It's just very, very recognizable.

Slice in half:

1 Roma or Beefsteak Tomato per person

Sprinkle with:

Fresh ground black pepper
Non-dairy parmesan cheese (or the real thing if you can handle it)
Chopped fresh, or dried basil
Olive Oil

Broil for a few minutes. Or bake a bit longer. The fake parmesan won't melt, but the real stuff should. All will brown at least a bit, and the tomatoes should be warm, even hot, and soft.
