Thai Pickle

Peel and Slice:

1 Small Cucumber

Chop:

1 Small Onion
1 Carrot

Arrange the above in a small, heat-safe bowl.

Boil a few minutes in small saucepan:

1/4 Cup Water
3/4 Cup Sugar
1/2 Cup Rice Wine Vinegar

Pour vinegar mixture over vegetables in bowl. Drop in a few hot peppers and garnish with cilantro. Serve with Satay.

The picture above is cucumber and one green onion, no garnish, no carrot.
