Salsa

Chop:

1 Roma Tomato
1 Clove Garlic
1/4 Small Onion
1 Serrano Pepper

Mix the above in a small bowl. Squeeze: 1/2 Lemon or Lime over the mixture, then garnish with cilantro leaves. I generally grind black pepper over it, but I do that to nearly everything. If you want it hotter, use habanero, with caution.

The portions are small, because I like mine fresh. I don't use a blender, food processor or other mechanical grinder, because I like the bits. I can't imagine using canned anything in a salsa, but what do I know.

Guacamole

Chop:

1/2 Avocado
1 Clove Garlic

Mix the above in a small bowl. Squeeze: 1/2 Lemon or Lime over the mixture, then garnish with cilantro leaves.

I don't get the whole sour cream thing, but then, I'm allergic to dairy products.

If I've made both, but not used them up, I usually take the tiny bits left, mix them together, and leave them in the fridge for the next time I have fajitas.
