Gallo Pinto

Per person:

1 Egg
1/3 diced bell pepper
2+ Tbsp diced onion
1 C cooked rice
1/3 C cooked black beans, including extra liquid
cumin
New Mexico red ground pepper or other
cilantro

Oil a frying pan, or two frying pans, one large and one small. In the large frying pan, saute the bell pepper and onion until the onion is transparent. Add and mix the beans and rice and enough of the extra liquid to make the rice look mottled. Or color it completely if you prefer. Spice to taste. Add cilantro last. You can cook the egg however you like, either off to one side on the large pan, or in a separate pan. Serve together.
