Pancakes

Mix:

1/2 Cup Flour
1 Tsp Baking Powder

Mix:

1 Lightly Beaten Egg
OJ, Soy Milk or Water, about 1/4 Cup, but enough to make the batter the right consistency

I'm currently using buckwheat flour (toasted, so technically kasha, and I run it through a mill, but you can buy it pre-ground). I used to use coarsely ground corn meal with a little wheat flour.

Add liquid mixture to the flour mixture. Stir until moistened. Do not under any circumstances beat, or otherwise attempt to render the mixture smooth. You'll wind up with horribly tough pancakes. If you run that spoon around more than a dozen times, you're doing too much.

Fold in one of OR drop in when spooning out:

Frozen or Fresh Blueberries
Chocolate chips
M & Ms

Spoon or Pour onto Greased Griddle or Fry Pan. Flip once. Serve with maple syrup and whatever spread you like.
