Banana Cake

Modified from a recipe in Beth Kidder, to reduce sodium and replace fat with oil.

Mash thoroughly with a fork, potato masher, blender, whatever:

three very ripe bananas

Beat together:

1/2 Cup oil
2 eggs

Mix thoroughly: banana with egg and oil mixture.

Add:

1 tsp vanilla
1 1/2 Cup brown sugar

Add, stirring just enough to combine:

2 Cups flour
2 tsp baking powder
3/4 tsp baking soda

Bake at 350. If as two layers in cake pans, 30 minutes. If as single layer in 9 x 13 pan, slightly longer. Sprinkle with confectioners sugar.

As usual, I use freshly ground whole wheat flour, either all soft or a combination of soft with a little hard. The original recipe called for all purpose flour. It also called for 1 tsp salt, which I found unnecessary, but your tastes may vary. This is not extremely low sodium, because of the presence of baking soda.
