Hoppin' John

Soak 1 Cup Dried Black-Eyed Peas

Chop, then cook in a medium pot in a small amount of oil, broth or water:

1/2 medium onion
1 clove garlic
1 spring fresh thyme

Add:

1 quart water
black eyed peas

Bring to a boil, reduce heat, simmer for an hour.

Season with:

Pepper
salt (optional)

Stir in:

3/4 Cup long-grain rice

If all you have is short grain sushi rice, use it. I did. It was tasty.

Cook for 30 more minutes, until the water has been absorbed and the rice and beans are cooked. If they are not cooked and the water is all gone, add more.
